T2W2: Midnight Snacks

Hi again everyone, Tiffany here! I’m not the kind to really stock up on assortments and snacks because I rarely (or I like to convince myself that I rarely) get midnight cravings; when I do, though, I can’t stave it off and ignore it. My go to recipe is this mug cake, which comes together in a pinch, in a microwave (because they’re great despite fifty different controversies surrounding it and health problems).

I usually just make it from scratch, with a ratio of 3:3:1:1 of flour, milk, sugar and oil in tablespoons, omitting the egg and liberally adapted from Kitchen Heals Soul; that or I use Kirbie’s Cravings’ recipe for the peanut butter mug cake. We’ll go with a pancake mix, however, for general ease and you can swap out your plain ol’ vanilla for another flavour of mix.

Pancake Mix Mug Recipe

Prep and Cook Time: 5 minutes

Serves: 1

Ingredients:

3 Tbsp pancake mix

4 Tbsp milk of choice (or plain water)

1 Tbsp of sugar (I prefer dark brown)

1 tsp vanilla extract

A pinch of salt

Additional Mix-Ins:

Broken chocolate pieces/chocolate chips

Any nut butter

Jam or spreads

Fruits

Method:

1. In a microwave-safe mug, stir the pancake mix, milk of choice, sugar, salt and vanilla extract until it just comes together.

2. If adding any additional mix-ins, add now and stir through batter.

3. Microwave for 1 to 1:20 minute, in 30 second bursts.

Tips:

The original recipe calls for covering the mug with plastic wrap. I found this tedious and it didn’t really stop the batter from overspilling. Baking it in increments, I found, prevented it from spilling and was just less of a hassle at the end of the day.
